Essentials in my garage:
As big a work bench as you can fit.
Lots of lights/drop lights (get a flourescent drop
light as well - saves on the burn ointment)
As big a vise as you can fit on the work bench.
As big a floor jack as you can get under the car
See Frank's post on nuts and bolts he just bought in
the archives - saves a lot of sometimes futile trips
to the hardware store.
In addition to the usual wrenches, I use my "shorty"
set very often, about 1/2 to 2/3 the length of a
regular open end.
Grinding wheel / wire brushes (= poor man's parts
washer)
Lots of electrical connectors/spade lugs
