I doubt there are any performance reasons a Holley would be better but I am
sure that unless your SUs or Solexes are balanced and setup correctly the
single Holley would make it idle better and easier to get the right mixture
providing the intake manifold is designed correctly.

I remember when Dave Pesky had his single SU 1500 I was amazed at how nicely
his car idled as compared to most Roadsters I've been in whose idle wasn't
quite as smooth.

Because of the accelerator pump the Holley would be an advantage in cold
startups as compared to SUs. It was because of the horrible problems I had
with getting my Z to startup in the winter that I bought a Holley setup. The
starting problem was on all 3 of the Zs I owned and generally started when
it was 40 or colder o/s. What is so weird is that my Roadster will start up
almost immediately in the cold with SUs. Oh well.
