I hope this isnt a stupid question but when everything is working properly
which way should the ammeter move?
Towards the - or the +
<

Yes.

Dave, The ammeter indicates the current going into or out of the battery.
When the battery is charging it should read +. If the battery is supplying
current to the loads it should read -. When you turn on electrical loads
(such as lights) with the engine off the ammeter should read -. After
starting the car the battery will require some current to make up the
current used starting the car which it draws from the generator/alternator.
Under normal conditions the ammeter should read zero. That indicates that
everything is OK and the generator/alternator is supplying all the
electrical current needed.
