The purpose of the bipass is to allow water circulation withing the engine
while it is coming up to temperature. Evidently if the water is not
circulating, hot spots can occure within the head and possibly cause
cracks.
If you use a currently available non-skirted thermostat without any
modifications, a lot of your coolent will bipass the radiator.So basically
what you want to do is restrict the flow through the bipass without
eliminating it.
