In the past, I bought a couple of U-joints from  Pep Boys that had the grease 
fitting
in the center of one of the caps.  (What's more, they were made in the USA).
The fitting is obviously easy to reach and does not ever interfere with 
anything.
Theoretically it could cause a slight balance problem on the driveshaft, but I 
used
these on the axles where balance is not an issue.

They have held up fine for several years now.
