personally, i would keep that spacer there.  not only is it
there for sealing the gap, but it is also an insulating piece. 
it will keep heat from being transfered through the intake
manifold into the carb and causing the fuel to vaporize before
it can be sucked into the engine.  a friend of mine has a small
block mopar engine in a plymouth belvedere, and after they
rebuilt the engine and replaced the carb, it ran like crap
untill they put a small half inch plastic spacer in between the
manifold and the carb.
