The shows were manufactured to the correct diameter. By grinding the shoe,
you are changing the effective diameter of the shoe and it will no longer be
correct for the drum.
It has nothing to do with the diameter of the shoe. You don't remove any
metal from the part where the lining is attached, just a small bit where the
adjuster fits. In effect you are shortening the adjuster so that the shoe can
move in a bit. If you remove lining material as you suggest you are
creating an uneven lining thickness which will not wear evenly.
