Grinding away part of the metal shoe is a BAD idea!!!!

The shows were manufactured to the correct diameter. By grinding the shoe,
you are changing the effective diameter of the shoe and it will no longer be
correct for the drum.

Take the shoes to a competent brake shop and have them arched to the correct
diameter. This involves grinding the brake lining to the correct diameter.

Just file or grind a little metal off the brake shoes where the adjusters  
contact them.  This in effect gives you more "in" movement.  Then  adjust
"out" 
as needed.  File the linings as others have suggested if you  wish but who 
knows what you will be breathing in.
