Here follows a series of WAGs:
That rag that was used to keep the water dripping out of the
radiator during reassembly, did ya ever pull it before you started
the engine that first time?
Is the water pump impeller the right one or is it trying to push
water through the engine?
Does it get hot THEN lose oil pressure or the other way around?
Did you check flow through block pre-assembly or after you lost the
rag in it? :-)

.. who could never get this SPitfire GT to run and finally wanted to
take a look at the intake and found during removal that PO had laft
rags in intake..
