I think some common sense is all you need in the situation.  I drive
other people's cars all the time, and am very careful with them.  It's
just a matter of knowing not only the car's abilities (those are easy to
find out) but your own, as well.  I wouldn't step into a GT3 porsche.  I
prefer not to drive modified cars unless I know who set it up and know
that it's not going to do any really funky stuff on me.  

As long as the "instructor" isn't trying to drive your car at 9/10ths or
10/10ths, there isn't much to worry about.  It's when the instructor
thinks he needs to go faster than you, when you get into problems.  All
you need to do is evaluate how much of an ego the instructor has.
