The key here seems to be that you are loosing coolant. As you have been working on the cooling system, the first thing I'd do is check/tighten all the hose clamps to ensure they're not leaking under

Even the 1600 in my S3 has a baffle, and I suspect even the Minx versions of this engine had one. Important to stop oil surging away from the pickup when braking.
