Most cars today are Unibody and cutting off the top ruins the integrity of car. It is very much more difficult to make a sturdy convertible than a hard top and is not uncommon for the convertible to weigh much more than its hardtop counterpart. Check the road test results of the Corvette coupes and convertibles and you'll see what I mean.
