I like using chemical & mechanical methods.  Undercoating comes off with
solvents, I also keep a beat-up 1" wood chisel handy for thick spots.
Chemical paint&varnish strippers took all the paint off my dashboard.  I
haven't tried it out on my car finish but it is rumored to work.

I will find out firsthand soon, as I've almost got all the stuff to weld
up my fenders now (glee!)
