Well, James, they don't roast the hops -- it's the malt (i.e., sprouted
grain).  The more you roast it, the darker it gets, and the roastier it
tastes.  Hops are bitter plant Buds that offset the sweetness of the
malt.  You could roast 'em, but then what you probably would get is ...
