There's nothing wrong about inquiring about the materials used. The
preferable tube material would probably be 304 stainless. As you say, if
400 series, it would likely be 409 stainless, which has barely enough
chrome in it to qualify as a stainless steel. It does rust with
alacrity. <g> As for branching, that depends on the cam installed--from
what I read in the Smith & Morrison book on exhaust systems, a double
3-branch system on a six-cylinder is ideal, and they don't recommend
further branching into one exhaust pipe. Probably means double the
exhaust parts, but prevents interference backflow up to about 240
degrees actual duration. The headers described above will invariably
come with a paint which will flake off in no time at all--the expensive,
but highly recommended practice is to have the header ceramic
flame-sprayed. Probably around $140 for the treatment, but it looks
good, and the coating will last next to forever, without tarnishing or
discoloring.

Barry, somewhere in the long-buried archives, I have the name of a guy
making custom header kits, somewhere in the north, as I recall. He sold
pre-bent tubes and flanges, together or separately, and I think he had
Triumphs listed. No promises, but if I can find it, I'll let you know.
He was probably CNC flame-cutting the flanges, so no telling what the
quality is, but I'm fairly certain there is a source for them.

Cheers.
