Conduit is a good thing. And it's probably cheaper to buy the conduit and
non-burial wire than to buy direct burial wire.  I would recommend using
conduit that is bigger than you need.  It's cheap enough, will give you
extra room for any future stuff, and is easier to pull through.  I'd use 1" 
PVC.
When you pull your Ethernet cable I would recommend pulling a second one
through as well (future phone?), and a 1/4" poly rope, so you can drag
anything else through in the future.
If you are in lightning territory be sure to use arrestors on both ends of
the run, even though it's underground it is still susceptible to very close
strikes (don't ask how I know this).
Code can vary, but you probably only have to make it deep enough to be out
of the way.
