It's possible to pump sewage.  Depending on where you are, you may not 
be allowed to add additional loads to an existing septic system.  If 
that's the case, you either will need to either add a separate septic 
system for the garage, replace the house's with a combined system, or 
forgo plumbing in the shop.
(You'd probably be allowed a spigot on the outside of the building.  )

Typically, gray water waste is allowed to be used for toilet flushing 
and irrigation, and some industrial purposes.  However, grey water 
systems generally have to be attached to sanitary sewers.  Almost 
nowhere there's any plumbing code at all are you allowed to have a sink 
run directly into ground.
