I've refinished a Horkey's oak bed. Sanded first with about 320 grit. Tacked
carefully.Spar varnish(oil based) cut 50/50 with thinner as 1st coat. Do the
50/50 again as 2nd coat. Light sanding with wet 400 grit and tack carefully.
3rd coat 75/25. wet sand and tack. 4th and 5th coat 100% varnish from new
can. Sand  with wet 1500 grit and tack after each coat.
Drying time is critical to a great finish...let each coat dry at least 24
hours...it's a pain but it's worth it.
Final trick...use fine cut compound to do each board and follow up with a
machine glaze (3M0 to give you a "glass-like" finish (by the way you need an
electric polisher with a foam applicator followed with a lamb skin buff) Then
put your favorite car wax on the bed and enjoy.
