Depends on how thorough you want to be. Here's what I normally do. See

Yes. Have the main oil gallery tapped out and replaced with threaded plugs.
But don't have the shop install the plugs. Bring the block home and clean it
out thoroughly with soapy water and brushes. You can either get a set of
brushes made for this or use bore brushes from a gun shop. Remember to clean
all the oil passages, not just the main oil gallery.

Yes, have them removed so you can clean any crud out of the water jacket. I
think you'll need 6 35mm plugs and one 30mm plug.
