Jan,
I want to get a complete body restoration done but unfortunately dipping
isn't an option in my neck of the continent and in fact I haven't heard of
anywhere in Canada you can get it done. Anyone know of anywhere in Ontario
or Quebec that will do this work?

You guys are not describing what job you want to do. The way that I see
it, there are three scenarios:
1) If the body requires a paint job, over the original paint, then I
would just sand the factory paint with a DA and start prepping it for
spraying. 
2) If the body has been repainted with an old enamel or lacquer, then I
would strip the paint with an Aircraft Stripper purchased from an auto
body supply store. Any other paint stripper is junk, and you are wasting
your man-hours. 
3) If you are after a COMPLETE body restoration (body stripped to bare
sheet metal everywhere), the only option is to dip the body. DON'T
SANDBLAST IT. The first primer coat should be an epoxy primer, after all
the welding is complete. ALso, remove ALL THE LEAD FILLER. The new
plastic fillers perform the best over anything else. Furthermore, lead
will crack over time, so you want it off the body.
