Darcy---Any competant machine shop can do a three-angle seat grind. This
is the time to do it.

If the cam you are currently using is one with a 2560 duration, one
with a 2700 duration is a good choice for those who just want a little
more power without having to give up too much low end torque.  (I don't
know if the "Piper 270" means that is the duration, or just a number
given it.)
It also depends where on the cam ramp the grinder starts taking his
reading.
Questions to be asked before purchasing any cam, to be sure how much
actual change you can expect.
This type of cam should delay the "running out of gas" feeling you now
have for another 300 rpm. 

You could re-ring the pistons in the way that you described. You'll want
to be sure to protect the all journals and oil delivery ports from
contamination and nicks during all of this.
