Rodney,
Ask ten people and you will get multiple (10?) answers. It really depends on
how you want to use and enjoy your car.
I have a 289 with about 300hp (guessing), a toploader of unknown origin,
205/50/15 tires and a limited slip rear with 3:31 gears.
For me the car is fine, over the summer I drove 300 miles on the highway at
65-70mph and never felt I had too much gear. Other people might not agree.
Also with the rear ratio I can hold my own (and even suprise) many of the
heavier muscle cars out there. For kicks I did take my car up to about 135
mph on the speedo once (I don't how it was correct or not) so if you are
brave and want to make things scream you can do that too (with a properly
built motor).
But that being said, I have never been on a dragstrip or road racing
course...so I may or may not like the 3:31 gears.
You really need to start where you are at and decide if you like what you
got or feel the need to change.
