On a truck I had in the 80s I bolted a piece of 1/2" plywood
to the tailgate. The latch mechanisim had four nice
big bolts on the inside of the gate, so I just used slightly
longer bolts to hold the plywood on. A couple coats
of varnish and some thin padding to keep it from
marring the 'gate completed it.
It made a good flat surface to work on (and a table
for truck camping). 1/2" was a little
thick and made the gate a bit heavy, I'd try 3/8 next time.
