2.0 Intake Manifold Questions

I've got a '68 2.0 I'm getting ready to install after the overhaul. It used to
be a CA car with a smog pump which I removed. There are some hoses coming out
the top if the manifold I believe are air. Can I remove them and plug those
holes? Also, I noticed the Bob Sharp manual says to plug the coolant lines
that run through the manifold. Is that wise for a street car?
