I'm trying to think how water wetter will reduce coolant temperatures. I suppose it improves heat transfer from the coolant to the radiator tubes but won't it also improve heat transfer from the head

No sealant is specifically required, however I use Edelbrock's Gaskacinch. It looks kinda like rubber cement - you lightly coat the block and head and both sides of the gasket (sealing surfaces only)
