Three hours of running is pretty far into the break-in. Most of the break-in takes place in the first few minutes of running. The high-load theory is to get the rings pushed against the cylinder walls to help bed them in. 1st gear runs aren't the best way to do this actually, because the run is over so quickly. 2nd and 3rd gear full throttle loads last longer.
