Lots of possibilities depending on how pessemistic/cautious you are.  On 
trips outside my 100-mile AAA towing zone I carry --

Electric fuel  pump to patch around the mechanical pump if (when) it fails.
Spare H2O pump -- never needed yet.
H2O pump pulley puller (thanks James H for the design).
Spare Coil.
Length of Nylon rope to make a belt to operate just the water pump if 
the dynamo siezes up.
Spare Dynamo with pulley.
Complete Dizzy with ignition wires (figure out what went wrong when I 
get home).
U-joint -- just cause it's small & I have it, don't feature myself doing 
that in a motel parking lot.
Hoses -- one universal ribbed type that can be used for either the upper 
or lower plus the short bellows at the rad top.
Brake fluid
Extra extra oil (ever buy a quart in a convenience store in Texas?  They 
pump it in the back yard and sell it for 2.99 a quart out front).
