I can't answer the stripping portion of this question since I re-veneered
mine.  But I can say to at least us a marine grade urethane (SPAR).  This
will provide superior outdoor resistance and the ever important UV
resistance which will cause other urethanes to yellow.  As for coating, thin
the 1st coat 50% to insure adhesion.  Then sand and repeat and sand and
repeat with straight urethane until you reach the finish you want.  The
final finish is dependent on the number of coats.  You can actually buff the
final coat if needed.  If you want a super glossy, glass-like finish then
you will need more coats.  Maybe up to 5 but if not then 3 will usually do.
