The thermostat can prevent damage, maintain optimum operating temperature
and provide quicker warmup. A bigger engine would be using the same
thermostat (just a switch or gate really) with more fluid, larger radiator
etc. A thermostat designed to function on a well engineered system would
provide the ideal temp for the engine, as long as the engine doesn't change.
Clogged radiators, corroded blocks, etc. would all cause a loss of the
ideal.
Don't forget that the water/coolant system isn't the only method of cooling
an engine. Oil provides some heat dissipation as well. In fact, by watching
my temp gauge I know when my oil is low. I run an old sieve that goes
through oil fast. When the oil level gets too low, temps go up.
