The head in my '71 GT6 was milled, & I wish that I had kept the little
metal sandwich-thing between the head & block (no, not the gasket, you know
what I mean).

Dual Webers on your GT6?  Where'd you get the manifold?
I've got a triple-Weber manifold for this one.  It's the only one that I
could find that didn't require a bubble in the hood, but cyls 1-4 are side
draft, and 5 & 6 are sorta updraft.  Tuning's a thrill, & the Strombergs
are on  more often.
