I think your on the right track about removing a tail shaft bolt.
Any chance you can find a Ford Shop Manual for that car and transmission?
A Shop manual will tell you the procedure or find a mechanic who worked
those cars.
An alternate method maybe to take the fill plug out, insert a tube and suck
the lube out with a transfer pump.

Subject: [Tigers] Gearbox oil drain plug
I have a small problem with my gearbox oil drain plug...ah I don't have one!
During the rebuild process I changed the top loader case to a wide ration,
wide eared later one from an early 70's Ford Torino in the USA, which they
fitted here in Australia to the Ford Falcon's V8 of the day. The case I had
not noticed until now doesn't have a drain plug, which is a problem as I
want to change the oil.
Anyone have a solution to this? DO I take the lowest bolt out of the tail
shaft housing and jack the front of the car as high as I dare?
