Jay, An approach we used for those type of situations was to weld a small piece of square tubing to the nut as a handle. As you try to tighten the bolt the "handle" butts up against one side and allows you to tighten, or loosen the nut quite easily. With the handle it is also easy to get started onto the bolt.
