There is also the theory that gasses continue to burn after the
exhaust valve opens.
And, the header is more likely to hold heat than the pisons, block,
and head which are water cooled and are like big heat sinks.

I'm still wondering if the EGT thermocouples caused some kind of
vortex or pressure wave obstructions.

What is the other history of the motor?  Did you do any other mods
when you put the EGT gauge on?
