Personally, I consider rubber fuel pipes (indeed anything rubber) as a
"service item", the replacement of which does not affect the originality of
the car (but with a Mountney steering wheel and seats out of an MX5/Miata
I'm not exactly a purist!). I'm not sure how much faith I'd have in a
35-year-old pipe to be fuel-proof anyway.
That said, of your options, I'd probably go with Option 1. The mesh filter
in the fuel pump should be adequate to protect it, so I wouldn't have
thought it a problem that the filter is downstream of the pump. It's
probably more straight-forward than Option 3 - the MkIII pipes. And your
original pipe is saved should you ever want to go back to 100% originality.
