Sunpro/Actro makes a line of mini gauges (1.5" diam.)
but they're only available in Ammeter, Oil pressure
and Water temp. 
I had a 50 ford with a tiny dash insert area, and the
DPO had tried to cram three standard sized 2-1/8"
gauges in there next to the speedo. I had a friend cut
a piece of black walnut to hold the Speedo, 3 mini
gauges and a standard fuel level gauge.

I'd get rid of the vacuum. There are certain gauges
that are handy to have on the road. I'd say the vacuum
would be handy when you have the bonnet up, blipping
the throttle, and therefore better to have in-hand,
moveable; to attach to various points on the carb/vac
advance/manifold.

I'm glad to have an ammeter in the car for piece of
mind, since I've had fan belts break and not notice
until the car overheated because the idiot light
wasn't working. And oil pressure as early warning for
the idiot light. (Hopefully, you'll notice a drop in
pressure long before the idiot light is triggered).  

IF you do have space, I like the idea of an Air/Fuel
sensor, so you don't have to brake out your gunson
colortune or gas analyzer every time you want to tune
the carbs, and you can see how the needle progression
is at speed.
