Sean,

  Get a can of starting fluid.  Next time it happens try spraying
this in the air filter/carb.  See if it helps.  If so, you may
be having fuel problems.  Has the carb ever been pulled and rebuilt
or cleaned?  What about the gas tank?  You may have a sticking 
needle valve.  But you would think that there would be enough fuel
in the float bowl to start the car.  Do you have an electric fuel
pump or the mechanical one?  

Just another place to look.
