Andrew,
Sounds like you found a keeper.
Rather than pay big $$ for new carbs, (assuming that
they really are worn), there are several firms that
specialize in complete rebuilding of SU's, often on an
exchange basis. Since this is not (yet) a daily
driver, you have some leeway.
I've dealt with Apple Hydraulics, but Joe Curto also
comest to mind, search the web.
NFI, etc.
