I can't see any reason for a home mechanic *not* to go with copper. 
It's easy to work with and easy to modify. Make the main run out of
3/4 or 1" to have some extra capacity. Use a T and two Ls for
every fitting, so you're taking air from the top of the pipe,
away from any condensed moisture. Slope the lines and put a 
ball valve drain at the end.
