I suppose this is a question of terminology ... to my way of thinking there
is only one header and most mail clients do not display any of it by
default. What they do display is a few specific fields within the header,
generally at least the "From", "To" and "Cc" fields.
But probably the most common email software in the world today also displays
the "Sender" field (if present), so I'd say it's a bit of a stretch to claim
that it's not in the "visible headers".
The messages in question (at least the copies I got) did have the sender set
to "shop-talk-owner@autox.team.net". This field is set by the mail list
program, so it's very unlikely that it will be wrong.
Just for grins, here is the header from one of those messages (as I received
it) :
