I plumbed my garage & basement workshop at my old house with 3/4" copper. I
don't recall the designation but there are two versions - one being a
heavier wall pipe. I used the advice offered by tip-tools for short risers
on each drop and drain locations. I will use copper again when I get my
current garage plumbed for air. Just need to get a Roun-Tuit.

At the compressor to pipe connection, I used an 18" long flex line - I
think it was something sold for connecting gas appliances. I don't recall
the psi rating but I didn't  have any problems with it...

At each dedicated station I had a regulator plus I had one more regulator
to which I attached a male quick-connect fiting. I could move that
regulator around to wherever I needed it - each drop had the corresponding
female-connect.

I had a friend who plumbed with plastic. He didn't have any problems with
breakage but, IMO, the advantage of the copper lines is getting water out
of the air and it is easy to modify your system if/when your needs change.
