You are showing your youth, Scott. :-) A pie safe was a small cabinet with
shelves that the cook placed pies in to cool (and keep little fingers out of

flies off of). It was either screened or otherwise arranged for air
circulation.
There are probably as many variations of design as there were users, especially
in different parts of the country.
