Any of the friction drives are shift on the fly. MTD, Snapper, etc.
I wouldn't build a truck as much as I'd buy a beater old riding mower/lawn
tractor and
convert the whole thing into a truck. That would be easier and cheaper. Is
there a
particular problem with using a trailer behind what you have now?
If you want to twiddle around with vehicle speed, look at the
belt drive systems that you can change pulley diameters on. Some
are easy, some are not. The faster you go, the less power you have
though.
