I'll try to help (going from memory)

Far left is the headlight.switch  Radio is self explanatory.  Above the
radio top left is the Choke top then to the right is the throttle far right
is the wipers.  My heater switch is in the fake ashtray plate on the right.

  Vent knobs go under the dash, about even with the radio knobs.  You
should have a cable that runs from the knobs (pull knobs, BTW) to the side
vent in front of the kick panels.

For clarity, order the Assembly Manual along with the Shop Manual.

Can't help with the engine and rear numbers.  Maybe a search for "'68
Camaro engine specs" on the web could tell you how the engine was
originally.
