Help! Cylinder Head

Well, never being content with how deeply in trouble I am, I have
followed my usual course of action and dug myself in even deeper.  But
hey, that's how you learn.  Isn't it????

Anyway, as a refresher, the list helped me determine that I had a small
oil leak from under the valve cover.  The other day I took it off and
you could actually see where the oil was coming out.  Since I had the
cover off I decided to use my new click-adjust tool and do the valves.
I did that, and since I was in "play with the car" mode I checked the
compression.  I got 125-165-150-155 three different times. Waaaay over a
10% spread between cylinders.  Cylinder one was at 155 last fall just
before I put it away for the winter.

In talking to a friend who is a real life mechanic I mentioned this and
having a white smoke from the exhaust when letting off the accelerator.
Not blue, but really really white.  He said it sounded like I was
getting antifreeze in the cylinders, which led me to believe that
perhaps I had blown the gasket internally. 

Having more courage than brains, the head is now off and sitting on my
bench, the gasket doesn't seem to show any obvious breaks. Links to some

A note:  Despite reading up on how to remove the head, I forgot to drain
the stupid cooling system, so the coolant in the cylinders came from the
head as I pulled it off (and realized what I hadn't done).  :/

All of which leads me to a series of questions.

1) With regards to the cylinder head picture, I would assume that the
different look of the cylinders (#4 being brown/dry) and the rest being
different states of oily points to something being wrong.  What?

2) In case you didn't notice in the cylinder pic, a couple of the studs
came out with the nuts instead of staying in the engine.  Should I get
all new studs & nuts, or re-use the old ones?  When putting the old ones
back in (or new ones for that matter) do you just use two nuts, one
acting as a jam nut?

3) When putting the new head gasket on, is there any kind of
glue/sealant that should be used, or just put it on there and put the
head on top of it and torque everything down properly?.

4) Is there anything else I should have done while the motor is this far
apart (without taking out the motor)?  Valves ground?  New seats?  Head
surfaced?

5) the book mentioned shims under the center posts on the rocker
assembly.  Mine did not have any (it appears to be a '67 or '68 engine).
The book seems to imply that even if it didn't, when I put it back
together I should put some in.  True?

I'm sure there will be more questions, but these are the ones that occur
to me most immediately.
