Max,
You are missing an important point -- the engine is not entirely enclosed by
the water jacket. Thus, there is some (actually quite a bit) of engine
cooling via the sump (via the oil) and other places.
Now, the cooling effect of the oil in the sump will vary according to the
ambient temperature (since there is no thermostat to control it). In summer
there will be less cooling and in winter there will be more cooling. This
means that, even with a constant water temperature, the engine temperature
will vary accoding to the ambient air temperature.
What this means is that changing the thermostat from summer to winter may
still be a good idea to compensate for the different cooling of the oil.
