What structural strength does the roof on an MGB GT provide? Is the

add support?<<<<
I sincerely hope that you are not very serious about your plan. Not
only does a GT differ very much from a roadster, I think that it will
cost you a lot more to convert a 'not decent' GT into a 'decent
roadster than to start with a roadster from the beginning.
Trade in your GT and buy a roadster instead. That wouldn't make you a
DPO who sacrificed an MGB GT for a bastard MGB roadster (at least I
wouldn't wanna buy that car!)
Have you thought about the windshield frame (not available new) and
1/4 lights (on a GT completely different from a roadster), attachment
points for the windshield, boot lid, front wings, interior, rear
wings, too much to recall.
As long as you're not an professional coachbuilder I strongly advise
you to leave your GT in one piece.
