This sounds like a serious restoration job!
My advice - usual disclaimers!! - is paint the underneath ( or is it now the
top?) now, while the paint can run down into all the nooks and kranies it would
normally run out of. Also nobody likes painting above themselves - something to
do with gravity, wet paint and hair!
As for the engine - don't do it until you need it. If you do it now, all the
oil you use during assembly will drain into the sump before you try and start
it some time in the future, it might even have time for the bores to rust.
Engine bits to replace? as you say, gaskets and oil seals then any thing that
doesn't look right. Most importantly ALLWAYS use new bolts and nuts if
appropriate for the connecting rods, if they break its very expensive.
