Multi-channel data recorders and pyrometers exist-- I don't know if any are
geared toward automotive use, though. Even with a "heads-up display" (HUD)
reflecting off the windshield, it won't be easy to read those numbers and
remembering what you saw will be even harder. Use a data logger and look at
the data at your leisure.
