It's harder than you first think,
because many circuits need hot all the time,
and get a switched ground.

And then there's just the joy of lacing up a harness!
My best results have been with renovating the harness-
lay the old one out on a sheet of plywood, and nail it 
into shape.  Then (worst case) replace the melted wires,
add the upgrade wires you need,
split out the circuits you want to separate, run fuses for the lights,
et cetera...
and rewrap.

I've had good luck using a mid- 80's Nissan Sentra fuse box-
it has 16+ circuits, several relays, and surface mounts.
It's not tiny, but it's not huge,  either.
