If they are free of pitting they are a snap to rebuild.  If there is ANY
sign of pitting they should be replaced or re-built.

Personally, I would have then re-built.  It costs a few dollars more per
cylinder but it is a lifetime deal.  They are relined with brass or
stainless and will not rust as will the original steel cylinders. One place
that will do it is White Post Restorations at http://www.whitepost.com/
They are quite familiar with our brakes as they are the same design used on
a number of high-end British cars.
